Day 3 of 20 (4/20 Foods) – Pop Tarts

Day 3 and we know, we’ve posted Pop-Tarts a few times now, but it’s because real Pop-Tarts are kinda gross and people need to have a better choice for a pie on the go! We have several choices here: apple, blueberry, strawberry, and even NUTELLA. These are perfect for breakfast on the go, afternoon snack, or the ideal munchie because you keep your hands clean and fork free.

Let’s get Glazed everyone!

Pop-Tarts

  • 2 refrigerated store bought pie crusts (the roll-up kind)
  • 1 egg
  • splash of water

Step 1: Cut pie crust into an even amount of the desired shape, we used the top of a Tupperware container like a cookie cutter to make our beautiful shape.

Step 2: Place one cut out piece on a cookie sheet and put a tablespoon of filling.

Step 3: Place top cut out of pie crust. Seal it with a fork and brush with egg wash (egg with a splash of water).

Step 4: Bake at 425 for 10-12 minutes.

Step 5: Once they have cooled for about 20 minutes, spoon on the glaze as you like.

 

Apple Filling

  • 2-3 green apples
  • ½ a lemon
  • 3 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon of corn starch

 

Strawberry Filling 

  • 1 pound (16 oz) fresh strawberries, tops removed and cut and quarter
  • ¼ cup turbinado sugar
  • ¼ cup white sugar
  • 2 ½ tablespoons cornstarch
  • 2 tablespoons Meyer Lemon juice
  • zest of one Meyer Lemon

 

Blueberry Filling

  • 1 pound (16 oz) fresh blueberries (frozen works too)
  • ¼ cup turbinado sugar
  • ¼ cup white granulated
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • zest of one lime (or lemon)

 

Nutella Filling (Just mix all in a bowl together with a hand mixer)

  • 9 tablespoons Nutella
  • 3 tablespoons brown sugar
  • ½ teaspoon flur de sel

 

For the Fruit Fillings:

  • Step 1: In medium saucepan, combine the fruit, sugars, cornstarch, lemon juice, and zest. (Cook each one separately, not in the same pan)
  • Step 2: Allow the fruit mixtures to cook over a medium low heat until the mixture thickens, stirring occasionally. About 20 minutes.
  • Step 3: Once the mixture has thickened, remove from heat and allow mixture to cool completely. For the Apple: Blend or mash filling, or if you like lumps of apples, leave it.
  • TYL Tip: We prefer our mixture to be cold, so after the fillings come to room temperature we place them in the fridge until chilled through. But this is not necessary.

 

Glaze

  • 3 tablespoons sour cream
  • ½-1 cup powdered sugar
  • 1 teaspoon vanilla extract (paste)
  • splash of milk (if needed to thin out)
